    Classes & Dates for the Fall 2010
    Classes will be held at Donna’s home – 84 Carpenter Lane, Saunderstown RI 02874
    Class size will be limited to 10 people.
    Classes will run from 6-8 p.m., to be followed by sampling the food prepared with appropriate wines.
    Wines will be provided by Claude Carroll of  Colonial Wine & Spirits
    Cost per class $60 pp
     
    TUESDAY                  NOVEMBER 2                      6 PM
    “Preparing & Presenting a Harvest Dinner Buffet”
    Curried butternut squash soup topped with crème fraiche
    Roasted Beet Salad w/orange vinaigrette on bed of bitter greens
    Medallions of roast pork drizzled w/fig balsamic reduction
    Baked apples wrapped in puff pastry w/cinnamon yogurt dressing
     
    THURSDAY             NOVEMBER 11                    6 PM
    “Preparing Pasta Three Ways”
    A quick 15 minute sauce made in a blender
    Authentic meatballs from campagna served with a quick red sauce over taguatelle and quickly baked with seasonal roasted veggies.
     
    WEDNESDAY,          NOVEMBER 17                    6 PM
    “Everything but the Turkey”
    All the side dishes to make your holiday a success.
    Class will include appetizers, soup, veggie gratins, cranberry chutney and free form tarts all made in advance.
     
    THURSDAY             DECEMBER 2                      6 PM
    “Entertaining w/artisan chesses and mini plates of hors d'oeuvres
    This class will be a food and wine paring featuring artisan cheese and foods complemented by a wine tasting.
     
    WEDNESDAY           DECEMBER 8                      6 PM
    “Taste of Sicily”
    We will begin with foccacia seasoned with the olives and oils of Sicily, garbanzo bean salad, swordfish poached in lemon, capers and olive oil and served with couscous. Finally, we will have a fruit course with the delicious almonds of Sicily.
